Red Curry with

Cauliflower and Squash

  1. 1 small head cauliflower, cored
  2. 1 medium butternut, acorn, or kabocha squash, peeled, seeded, and cubed
  3. 1 carrots, chopped
  4. 1 small onion, chopped
  5. 2 tablespoons minced fresh ginger
  6. 2 lemongrass bulbs, slightly smashed
  7. 1-2 tablespoons red curry paste
  8. 1 tablespoon natural cane sugar
  9. 1/4 teaspoon crushed red pepper flakes
  10. 1 14 oz. can coconut milk
  11. 2 1/2 cups low-sodium vegetable broth
  12. 1 pound frozen green beans, thawed
  13. 1 12 oz. package firm tofu, cubed (not silken)
  14. 1/2 cup chopped fresh basil 


    In the morning, take the green beans out of the freezer so they’re thawed when you get home. For added protein, stir in red lentils halfway through cooking time, or fold in cooked chickpeas at the end. Serve with warm garlic naan or basmati rice.


  1. Cut cauliflower into large florets. Combine cauliflower, squash, carrots, onion, ginger, and lemongrass in a 4- to 5-quart slow cooker
  2. In a small bowl, combine curry paste, sugar, red pepper flakes, and a little coconut milk; stir until creamy, and add to pot. Add remaining coconut milk and broth; stir to mix. Cover and cook on high for 4–5 hours, or low for 6–7 hours, until vegetables are tender.
  3. During final 20 minutes of cooking, season with salt; add green beans and tofu. Cover and cook until beans and tofu are hot. Just before serving stir in fresh basil. Serve in shallow bowls.

The “facial feedback” hypothesis holds that physically expressing an emotion sends a biochemical signal from the facial muscles that “loops” back to the brain. It’s much the same as sound coming from a speaker that’s picked up by a microphone and sent back through the speaker as amplified feedback. A 1988 study by German researchers involved telling participants to hold a pen in their mouths in one of two ways – in the “lips” position, which activated the muscles used in frowning, or in the “teeth” position, which employed the muscles used for smiling. A control group simply held the pen in their hands. Then the three groups were shown a cartoon, and told to evaluate how funny they found it. Members of the “teeth” group reported finding the cartoon significantly more amusing than did those in the “lips” or control groups.
In other words, people who smiled – even though they didn’t realize there were smiling – found the world a jollier place. Remember: expressing emotion is a key component offeeling emotion. If you are a habitual half-smiler and fake laugher, make it a point to try opening up and letting go the next time you feel the urge. Repeat as necessary. You may well find yourself happier for having done so.

How to de-code the information on those little stickers

While unpacking groceries, you pull out the bag of apples and decide to eat one then and there. You take it over to the sink, wash it off and — with some effort — peel off the little sticker. Pausing to look more closely at the sticker you wonder, “What do those numbers mean?”

As much as we may dislike them, the stickers or labels attached to fruit do more than speed up the scanning process at the checkout stand. The PLU code, or price lookup number printed on the sticker, tells you how the fruit was grown.

As reported by Maria Gallagher, in the June 26, 2002 issue of the Philadelphia Inquirer, by reading the PLU code, you can tell if the fruit was genetically modified, organically grown or produced with chemical fertilizers, fungicides, or herbicides.

Here’s how it works:

For conventionally grown fruit, (grown with chemicals inputs), the PLU code on the sticker consists of four numbers. Organically grown fruit has a five-numeral PLU prefaced by the number 9. Genetically engineered (GM) fruit has a five-numeral PLU prefaced by the number 8. For example,

A conventionally grown banana would be:

A genetically engineered (GE or GMO) banana would be:

The numeric system was developed by the Produce Electronic Identification Board, an affiliate of the Produce Marketing Association, a Newark, Delaware-based trade group for the produce industry. As of October 2001, the board had assigned more than 1,200 PLUs for individual produce items.

Incidentally, the adhesive used to attach the stickers is considered food-grade, but the stickers themselves aren’t edible.

An Important Note About the Connection Between Thyroid Cancer and X-rays and Mammograms

Hello Community,

Several friends of mine did pass on the Dr. Oz information below to me about the connection between Thyroid cancer and x-rays and Mammograms. I received this interesting email several times, which I took as a sign that I wanted to share two local addresses for Thermography – which would replace the Mammograms x-rays at your regular doctor. I learned about Dr. Saputo, M.D. in Walnut Creek from my Holistic School two years ago and have been going there. Here is a link to his website to learn some more facts about Thermography.

The other address is and they are in Danville. I have not checked them out in person, only found them in our local magazine “Natural awakenings” from January 2012 which I picked up in front of Whole Foods Market.


Thyroid cancer

On  Wednesday, Dr. Oz had a show on the fastest growing cancer in women,
Thyroid cancer. It was a very interesting program and he mentioned  that
The increase could possibly be related to the use of dental x-rays and
Mammograms. He demonstrated that on the apron  the dentist puts on you for
Your dental x-rays there is a little flap that can be lifted up and wrapped
 around  your neck. Many dentists don’t bother to use it. Also, there is
 something called a “thyroid guard” for use during mammograms.
  By coincidence, I had my yearly mammogram yesterday. I felt a little
 silly, but I asked about the guard and sure enough, the technician had one
 in a drawer. I asked why it wasn’t routinely used. Answer: “I don’t know
 you  have to ask for it.” Well, if I hadn’t seen the show,  how would I have
 known to ask?
 We need to pass this on to our daughters, nieces, mothers  and all our
Female friends and husbands tell your  wives!! I just did, now you send
It on to your list.

Chemical to Avoid in Our Beauty Products

Hello everybody,

Did you know that 1,100 chemicals that are banned in Europe are still allowed in the US in personal care products. I came across this little explanatory video below to make me a bit more aware of all the chemicals we do use in our daily routines.

Maybe I can even convince my 16 year old daughter, who is my “product queen”  to watch this video and peak her interest as well?

Anyway, this smart video tells us that the average woman exposes herself to 167 different chemicals  on her body and face
during her daily beauty regime.

It continues to offers points on what to avoid. Grab a pen.

You DO want to read the small print from now on.

Might we be able to just do without some products?

Great Alternative to Sunscreen!

Hello everybody,

The end of summer is approaching, but the temperatures are still high and my daughter is starting her soccer season. In the past this meant for me to make sure she does protect her skin of all the sun rays with plenty of sunscreen. But these days the “sunscreen” topic is very controversial and confusing. I wanted to give her and myself a product that I know will not harm the skin because it only uses natural ingredients and no extra chemicals that I could not identify. In my research endeavors I found this simple, non-toxic recipe for sunscreen that we can make ourselves, with an SPF factor of about 15, and a shelf live of 6 months from the website below.

Skip the drugstore and the chemicals, and enjoy the sunshine!

Making Your Own All Purpose Household Cleaner

Hello all you green and conscientious people out there!

Today I came across a real cool video from a website called

For the last several years now I have severely downsized my use of chemicals around the house for cleaning purposes. But I still ended up buying the “organic” and green version of an all purpose cleanser because I did not really know what goes inside that bottle.

Coming across this little video made me realize that it is not that difficult to experiment with a home made concoction. Also making your own all purpose household cleanser saves money
and plastic packaging over time.

Real essential oil of lavender smells better than the commercial products too! I personally will try mine with pine essential oil and maybe a little eucalyptus oil? Let me know once you found a good smelling version for yourself!
